No trip to Uzbekistan is complete without plov. This fragrant dish of rice, carrots, lamb and golden onions is cooked in giant kazan cauldrons and shared at celebrations, weddings and ordinary lunches alike — every region has its own proud variation.

Beyond plov, seek out samsa baked in a tandoor oven, hand-pulled lagman noodles, and non bread so revered it is never placed upside down. The bazaars overflow with dried fruit, nuts and spices, and a meal always ends with endless cups of green tea.
